Rooney Upton, Margaret and their 7 year old son James (the official taste tester) have been farming lavender on the cliff tops at Maslins Beach since 1999. Growing 15 different varieties of lavender, the farm specialises in low-camphor plants which are most suitable for eating.
Cooking with lavender is quite experimental and Rooney and James work together in the kitchen to trial different recipes. The development of their renowned lavender brownies took over a year.
Free-range eggs, fresh from their farm are used in their products and lavender scones are always hot from the oven on market mornings. Their creamy, fresh lavender ice-creams contain no artificial ingredients and the lovely pink colour of their refreshing lavender lemonade originates from the natural colours of the flower. You can even buy dried culinary lavender to make your own teas. Brownies (including gluten free) can be pre-ordered and make an impressive platter for parties and functions.
The lavender is carefully hand harvested with a scythe, but for the teas and lemonade, it is handpicked early in the morning, bud by bud to preserve its flavour. Rooney and James are proud of their products because they combine the alluring flavour of lavender with the real taste of old-fashioned cooking.
