Three and a half tonnes of mushrooms per week may not seem like much for a working farm, but because of its small scale Fresh Fields Mushrooms’ strength lies in its quality control.

“It’s because the farm is small our attention to producing the best quality mushrooms is one of our strengths,” say Val and Patrick Newenham.

All their mushrooms are grown in air-conditioned sheds at Middleton with a standard temperature of 19C but there is a cycle which needs to be adhered to with the mushrooms heated at certain times, cooled at others and hit with the occasional blast of fresh air.

As Val says, “The environment is very important to getting the best crop.”

Spawn compost is bought from Victoria, before Val and Patrick add a casing mix, which is the medium that the mushrooms grow in.

The mushrooms are then watered and picked over for 3-4 days, then watered and picked again. With each crop you get less and less, and after 4 weeks the harvest is finished.

Spent compost then gets taken away for use on a nearby farm. The farmer has reported excellent results from its use with his mushroom compost crop surpassing the quality of the rest of the crop.

Fresh Fields Mushrooms go to the Pooraka Wholesale Markets and boxes of beautiful, long-lasting, fresh mushrooms go each week to the Willunga and Victor Harbor Farmers Markets and IGA in Mt Compass.
