Tony and Margaret Harding have been producing hand-made olive oils, seed and nut oils and condiments for more than 10 years.
Established in 1996, their grove is located near Willunga, on the South Australian Fleurieu Peninsula.
The Mediterranean climate of the area and its rich, loamy soils enhance the flavour and texture of their olive oils. These oils, ‘Manzanillo’ with its moderate tropical fruit aromas, ‘Verdale’ infused with delicate herbal aromas, and ‘Mission’ with the aroma of light tropical fruits can also include the tasteful additions of ‘herb and garlic’.
Their olives are hand harvested into a catcher to keep the fruit off the ground. The oil is then extracted using no water so the poly-phenol (or anti-oxidant) is preserved within the oil.
Hailing from Sri Lanka, Tony remembered the exotic oils of his childhood and so he purchased a seed and nut oil expeller and began experimenting. Almonds, walnuts and mustard seed were all turned into beautiful, fresh, fragrant oils that have become highly sought after by chefs and enthusiastic home cooks alike. Today the range also includes pumpkin seed, apricot kernel, hazelnut and macadamia nut oils, as well as a range of tasty condiments and spreads.
